This week I’m kicking off a new blog post series that will come out every Monday, and that is… SUPERFOOD OF THE WEEK. I will highlight a superfood, the health benefits, as well as different ways to incorporate it into your diet. It’s important to try to eat as many superfoods as we can, though it can be daunting when seeing the lengthy list. I’m here to help make it a bit easier for anyone who is trying to live a healthier lifestyle.
Today, I am going to talk about my all time favorite- coconut. I am obsessed with all things coconut; the smell and the taste alone reminds me of summer and being on a beach.
Coconut has a plethora of health benefits. It is a great source of fiber, which aids in digestion. It also contains vitamins B6 and iron as well as the minerals magnesium, zinc, copper, manganese, selenium, and potassium. Coconut is also one of the highest plant-based sources of saturated fat, and the type of fat that metabolizes more quickly than those found in meat. It is also a great source of plant based protein and electrolytes.
Coconut comes in many different forms for our consumption. They include, but are not limited to:
- Coconut meat (the actual fruit)
- Coconut water
- Coconut milk
- Coconut oil
- Coconut flour
- Coconut yogurt
- Coconut shreds
- Coconut wraps
My go-to ways to incorporate coconut is by drinking coconut water (ONE is my favorite brand), having coconut yogurt with granola and fresh fruit, or making a smoothie with coconut milk (So Delicious is my go-to non-dairy brand).
